Ingredients:
6 egg yolks
1 ½ cups heavy cream
1 tbsp beef gelatin (optional, for firmness)
1/2 tsp salt (Celtic or Redmond)
Optional: 1 tbsp egg white powder (for extra protein & fluff)
Instructions:
In a cold metal bowl, whip all ingredients together for about 8–10 minutes, until thick and fluffy.
Pour mixture into silicone molds, ice cube trays, or mini muffin tins.
Freeze for 3 hours.
Pop out bites, whip again briefly if needed, then freeze again until solid (about 2–3 hours).
Store in a freezer-safe container. Let sit a few minutes before eating for best texture.
Tips:
Use silicone molds for easy removal.
Add a sprinkle of freeze-dried liver powder on top for a nutrient-dense twist.
