Ingredients
- ½ cup cottage cheese (full-fat or low-fat)
- 3 large eggs
- ½ cup fresh blueberries
- Optional: pinch of cinnamon or vanilla extract for extra flavor
Instructions
- Preheat oven to 350°F (175°C). Line a baking tray with parchment paper or grease silicone molds.
- Blend or whisk: Add cottage cheese and eggs to a blender or whisk by hand until fully smooth and fluffy.
- Pour & top: Pour the mixture into muffin molds or small rounds on the baking sheet. Gently press blueberries into the top.
- Bake for 15–18 minutes or until puffed, golden on the edges, and set in the center.
- Cool slightly before removing and serving. Enjoy warm or chilled!
